A caterer for private flights out of Los Angeles — operators send an order, and a meal is prepped, packed and delivered planeside on a deadline that doesn't move. Orders arrived as free-form emails, PDFs and spreadsheets in a dozen formats. Someone re-typed each into accounting, someone else wrote the kitchen tickets, someone else built the shopping list, and the delivery run was planned from memory. It worked because the people were good. It didn't scale, and every re-type was a chance for a wrong item on a plane.
